Pancakes, low carb and simple
These are great for a low carb treat especially when you have a hankering for something sweet!
You can literally whip a batch in under 2 minutes with ingredients you probably already have on hand.
2 eggs
3oz or 85g of Cream Cheese (full fat)
1 teaspoon of Xylitol or equivalent sweetener
1 teaspoon of ground cinnamon
Add all ingredients into a bowl and beat until smooth, or an easier and even quicker way is to use a blender and blend until smooth.
Heat up a frying pan on a moderate heat, add a little butter and pour or ladle batter to create each pancake.
Cook for about 4 minutes on the first side and then a minute or 2 on the other and serve.
Makes 1 serving of 2 pancakes or several pikelets.
Carb count >5g per serving (excluding sweetener)
Add topping of your choosing, whipped cream, strawberries or just a little butter and enjoy.
Variation, drop the sweetener and you have a savoury pancake, add herbs spices or leave plain and add to a main dish as a wrap or crepe kind of thing.
