Dairy Food - Chocolate Yoghurt
For those not from this part of the world, you most likely have no idea what I am talking about here, but basically its like a type of silky smooth chocolate flavoured yoghurt textured pudding. Used to love these as a kid and as an adult now and then.
But the real version is made with sugar and now tastes nothing like chocolate and they killed the texture and density, basically ruining it.
My recipe is simple and delicious but is not for those on low carb induction as it does contain some lactose 7-8g from the milk and 6g from sugar in the Lindt.
1.5 tsp of powdered unflavoured gelatin
2/3 glass of full cream milk
1/8-1/4 cup full cream
3 tsp Cocoa powder
2 squares Lindt 70% Dark Chocolate
4 tsp Xylitol
Method: Pour 1/3 cup of milk into a glass and sprinkle the gelatin onto the milk. Let stand for 10 minutes to crack the gelatin. Wait.
After 10 minutes or more, stir in the gelatin. In a small pot put the remaining half a cup of milk and place over a low heat and bring to a boil and take off heat quickly.
Let the hot milk cool a little (1-2 mins) and then stir in the milk/gelatin mixture until dissolved, next add the xylitol, cocoa and the Lindt and stir until dissolved. Or use a blender to mix together.
Pour into a serving dish and refrigerate 3-4 hours Minimum, enjoy.
