Almond Flat Bread
Recipe submitted by Gayle, I have made this myself 4 or 5 times now and it is just awesome, closest low carb recipe to bread I have come across so far. This Flat bread also makes an excellent pizza base, just double the recipe and prebake then add your pizza toppings as usual.
1 x 70gram packet of ground almonds
salt & pepper
1 teaspoon baking powder
1 Tbsp melted butter
2 eggs
Add the baking powder to the ground almonds in a medium bowl, beat the eggs and add the melted butter, season with salt and pepper and mix into the ground almonds.
At this point you may also like to add other ingredients, chives, spring onion, grated cheese, roasted capsicum etc.
You should now have a fairly thick batter, spread onto a sheet of baking paper or silicon mat and grate some cheese over it, bake in oven at about 170c for 15 mins.
Serving ideas:
By itself.
As a Pizza base (skip) the grated cheese for prebake.
As a Flat bread for dipping in soup.
Spread on some butter/peanut butter/jam/marmite/vegemite etc.
