Almond & Coconut slice
I could not find a simple slice recipe anywhere so I thought I would modify the cheesecake base and turn it into a slice, first time I tried it it worked out great.
Slice
150g Almond meal
60g or 1/3 cup of dessicated coconut
1/4 cup of Xylitol
1 teaspoon of baking powder
60g butter melted
1/2 teaspoon of vanilla
3 large teaspoons of peanut butter or cocoa powder
3 large eggs
Combine all dry ingredients into a medium sized mixing bowl and mix to combine.
In another bowl beat the eggs, add vanilla, peanut butter and butter and mix well.
Combine the 2 mixtures well and bake in a well greased shallow baking dish.
Bake at 170c for 15-20 minutes or until nicely golden brown, remove from oven and turn out onto a cooling rack (it should hold together). Let cool.
Frosting/Icing
125g cream cheese (softened)
1 teaspoon vanilla
Approx 3 Tablespoons of Xylitol to taste
Add the softened cream cheese and vanilla to a mixing bowl and begin beating.
Once it is smooth add the xylitol a little at a time tasting to get the correct amount sweetness, I prefer it to be "just sweet" which works well with the tartness of the cream cheese and depth of the vanilla and the body and texture of the slice.
Once the slice has cooled spread the cream cheese icing evenly over it and refrigerate. Ready to be eaten straight away.
Carb count : 25 total, if cut into 12 servings 2 net carbs per slice
Extra toppings could include chopped walnuts, pistachio etc.
